Olive Oil<\/li>\n<li>1\/4 c. red pepper, diced<\/li>\n<li>1\/4 c. celery, diced<\/li>\n<li>2 green onions, diced<\/li>\n<li>1 cup parsnip, finely shredded<\/li>\n<li>1 c. Panko bread crumbs (appx)<\/li>\n<li>1\/4 c. chickpea flour<\/li>\n<li>2 eggs, scrambled<\/li>\n<li>1\/4 tsp. salt<\/li>\n<li>1\/8 tsp pepper<\/li>\n<li>1\/4 c. mayonnaise<\/li>\n<\/ul>\n<p>Heat 1 T oil, add pepper &amp; celery and cook over medium heat, stirring occasionally for 2 minutes. Add onions and cook, stirring occasionally for 1 minute or until the vegetables are tender.\u00a0 Remove from heat &amp; allow to cool.<\/p>\n<p>In mixing bowl, combine parsnip, panko, flour, egg, salt &amp; pepper.\u00a0 Stir in the pepper and celery mixture and mayonnaise.\u00a0 Shape into 4 cakes, about 3 inches across &amp; 3\/4 inch thick.<\/p>\n<p>Wipe out the skillet &amp; return it to medium heat.\u00a0 Add the remaining oil and heat.\u00a0 Add the cakes and cook until golden brown, 2-3 minutes per side.\u00a0 Do not crowd the skillet: you may have to do more than one batch.\u00a0 Serve immediately with Remoulade sauce.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>2 T.
