{"id":104,"date":"2008-11-16T21:56:46","date_gmt":"2008-11-17T04:56:46","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=104"},"modified":"2008-11-17T12:16:57","modified_gmt":"2008-11-17T19:16:57","slug":"ciabatta-bread-wrosemary-bread-machine","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=104","title":{"rendered":"Ciabatta Bread w\/rosemary, bread machine"},"content":{"rendered":"<h3><!--more-->Ingredients<\/h3>\n<h4>Biga<\/h4>\n<ul>\n<li>7\/8\u00a0cup water<\/li>\n<li>1 1\/2\u00a0cups bread flour<\/li>\n<li>1\/2\u00a0teaspoon fast-rising active dry yeast<\/li>\n<\/ul>\n<h4>Dough<\/h4>\n<ul>\n<li>7\/8\u00a0cup water<\/li>\n<li>1\/4\u00a0cup buttermilk<\/li>\n<li>2\u00a0tablespoons olive oil<\/li>\n<li>3\u00a0cups bread flour<\/li>\n<li>1\/4\u00a0teaspoon fresh rosemary, minced<\/li>\n<li>1 1\/2\u00a0teaspoons salt<\/li>\n<li>1\/2\u00a0teaspoon sugar<\/li>\n<li>1\/4\u00a0teaspoon yeast<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<h4>Bida:<\/h4>\n<li>Place the bida ingredients in machine according to your manufactures directions. My machine calls for wet first then top with dry.<\/li>\n<li>Set machine for dough cycle, press start and let kneed for 5 minutes. Shut machine off and let rise over night at least 12 hours.<\/li>\n<h4>Dough:<\/h4>\n<li>Place the wet ingredients over the bida then top with flour and rosemary. Place salt, sugar and yeast in seperate corners.<\/li>\n<li>Set machine to basic dough setting press start.<\/li>\n<li>When finished remove doungh to two bowls covered with an oiled plastic wrap.<\/li>\n<li>Place in a draft free warm place and let rise till tripled in size. About 1 hour.<\/li>\n<li>Flour 2 cookie sheet pans.<\/li>\n<li>Carefully place each dough onto pans. With floured hands shape dough into a rectangle one inch deep. Try not to release any of the air bubbles that were made during the rise.<\/li>\n<li>Sprinkle dough with flour and let rise again in a draft free warm place for 30 minutes.<\/li>\n<li>Preheat oven to 425 degrees<\/li>\n<li>Bake for 25-30 minutes.<\/li>\n<li>Spraying with water during baking gives a crisp crust.
