{"id":110,"date":"2008-11-17T11:49:54","date_gmt":"2008-11-17T18:49:54","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=110"},"modified":"2008-11-17T11:49:54","modified_gmt":"2008-11-17T18:49:54","slug":"baby-crab-cakes","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=110","title":{"rendered":"Baby Crab Cakes"},"content":{"rendered":"<p>Makes 20 mini crab cakes &#8211; Recipe from Cuisinart.com<!--more--><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1\/2 cup chopped artichoke hearts *<\/li>\n<li>1\/2 cup coarse cracker crumbs<\/li>\n<li>1\/4 cup mayonnaise<\/li>\n<li>1 large egg, lightly beaten<\/li>\n<li>2 tablespoons finely chopped jalape\u00f1o pepper<\/li>\n<li>1 shallot, peeled and minced<\/li>\n<li>1 clove garlic, peeled and minced<\/li>\n<li>2 teaspoons chopped fresh cilantro or parsley<\/li>\n<li>1 teaspoon Dijon-style mustard<\/li>\n<li>1\/8 teaspoon cayenne pepper<\/li>\n<li>8 ounces lump crabmeat, carefully picked over to remove shell and cartilage fragments<\/li>\n<li>2 tablespoons unsalted butter<\/li>\n<li>2 tablespoons extra virgin olive oil<\/li>\n<li>round tortilla chips<\/li>\n<li>salsa or guacamole for garnish<\/li>\n<p>\u00a0\u00a0<\/p>\n<h2>Instructions<\/h2>\n<p>In a medium bowl, combine the chopped artichoke hearts, cracker crumbs, mayonnaise, egg, jalape\u00f1o pepper, shallot, garlic, cilantro, mustard, and cayenne; stir to combine. Gently fold in the crabmeat \u2014 do not over mix or break up the crab lumps. Shape into 20 mini crab cakes using a slightly rounded tablespoon as a measure. Place shaped crab cakes on a baking sheet lined with plastic wrap and refrigerate until firm, at least 1 hour.<\/p>\n<p>Heat 1 tablespoon of the butter with 1 tablespoon of the olive oil in the MultiClad Skillet over medium high heat. When bubbly, add 10 crab cakes and cook about 2 to 3 minutes per side, until crispy and browned.
