{"id":1229,"date":"2011-04-25T14:18:40","date_gmt":"2011-04-25T21:18:40","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1229"},"modified":"2011-04-25T14:18:40","modified_gmt":"2011-04-25T21:18:40","slug":"split-pea-burgers","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1229","title":{"rendered":"Split Pea Burgers"},"content":{"rendered":"<p>Alton Brown recipe<!--more--><\/p>\n<ul>\n<li>2 T olive oil, plus additional for sauteing<\/li>\n<li>1\/2 c onion, chopped<\/li>\n<li>1\/2 c bell pepper, chopped<\/li>\n<li>to taste &#8211; kosher salt<\/li>\n<li>2 tsp garlic, minced<\/li>\n<li>4 ounces mushrooms, sliced<\/li>\n<li>3 c vegetable broth<\/li>\n<li>1 c dried split peas, sorted &amp; rinsed<\/li>\n<li>1\/2 c raw brown rice<\/li>\n<li>1 tsp ground coriander<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>1 c plain dry bread crumbs<\/li>\n<li>to taste, black pepper, freshly ground<\/li>\n<\/ul>\n<p>Heat 1 T oil in large saucepan, over medium heat.\u00a0 Add onion, bell pepper, generous pinch of salt.\u00a0 Sweat 5 minutes or until onion is soft.\u00a0 Add garlic &amp; mushrooms, continue to cook another 4 mintues<\/p>\n<p>Add broth, split peas, rice, coriander, cumin.\u00a0 Increase heat to high and bring to boil. Reduce heat to low, cover, simmer for 1 hour, or until rice &amp; peas are tender.<\/p>\n<p>Remove from heat, gently pour mixture into the bowl of a food processor.\u00a0 Process until just combined.\u00a0 Do not puree.\u00a0 Pure mixture into a bowl and stir in 3\/4 c bread crumbs. Season to taste with salt &amp; pepper.\u00a0 Refrigerate for 30 minutes<\/p>\n<p>Shape mixture into patties and dredge on each side in remaining 1\/4 c bread crumbs.\u00a0 Heat remaining 1 T oil in medium saute pan over medium heat.\u00a0 Add 2 burgers at a time and saute until brown on each side, 3-4 minutes per side.\u00a0 To grill, cook on high for 3-4 minutes per side.
