{"id":1232,"date":"2011-05-01T23:16:15","date_gmt":"2011-05-02T06:16:15","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1232"},"modified":"2011-05-01T23:16:15","modified_gmt":"2011-05-02T06:16:15","slug":"lentil-quinoa-salad","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1232","title":{"rendered":"Lentil Quinoa Salad"},"content":{"rendered":"<p>Recipe courtesy Melissa d&#8217;Arabian<\/p>\n<p>Ingredients<br \/>\n\u20221\/2 cup quinoa<br \/>\n\u20221 1\/4 cups water, plus 2 cups<br \/>\n\u20221\/2 cup lentils<br \/>\n\u20221 teaspoon Dijon mustard<br \/>\n\u20222 tablespoons red wine vinegar<br \/>\n\u20221\/4 cup vegetable oil<br \/>\n\u20221\/4 teaspoon garlic powder<br \/>\n\u20221 lime, zested<br \/>\n\u2022Kosher salt and freshly ground black pepper<br \/>\n\u20222 green onions, chopped<br \/>\n\u20221 tablespoon chopped fresh cilantro leaves<br \/>\nDirections<br \/>\nPut the quinoa in a sieve and rinse in cold water. In a large microwave-proof bowl with a cover, add the rinsed quinoa and 1 1\/4 cups water. Cover and microwave on high for 9 minutes. Let it sit for 2 minutes then stir. Quinoa should be tender enough to eat, but with a little &#8220;pop&#8221; upon biting.<\/p>\n<p>Put the lentils in a sieve and rinse in cold water. In a saucepan, simmer the lentils in 2 cups water until the lentils are tender, but not mushy, about 30 minutes. Drain and cool.<\/p>\n<p>In a small bowl, whisk the mustard and vinegar together, and drizzle in the oil to make an emulsion. Add the garlic powder, lime zest, and salt, and pepper, to taste.<\/p>\n<p>To assemble the salad: In a medium salad bowl, mix the quinoa, lentils, green onions, and chopped cilantro.
