{"id":1277,"date":"2011-05-30T11:39:08","date_gmt":"2011-05-30T18:39:08","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1277"},"modified":"2011-05-30T11:39:43","modified_gmt":"2011-05-30T18:39:43","slug":"potato-pancakes","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1277","title":{"rendered":"Potato Pancakes"},"content":{"rendered":"<p><!--more--><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 egg, beaten<\/li>\n<li>2T all purpose flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 russet potato, peeled &amp; grated<\/li>\n<li>1\/4 yellow onion, grated<\/li>\n<li>2 T canola oil<\/li>\n<li>*sour cream for garnish<\/li>\n<li>*chopped chives for garnish<\/li>\n<\/ul>\n<p>In medium bowl, whisk the egg, flour\u00a0 baking powder.<\/p>\n<p>Peel &amp; grate the potato on the medium sized holes of a\u00a0 box grater. Place in colander &amp; rinse lightly with cold water. Press with paper towels to blot excess moisture.\u00a0 Grate the onion. Add the grated potatoes &amp; onions to the egg mixture &amp; mix.<\/p>\n<p>Heat oil over medium heat in 12 inch cast iron skillet. Scoop 1\/3 c of potato mixture into pan. Flatten with spatula to a thickness of 1\/4 insh.\u00a0 Cook until golden, 3 minutes on each side.\u00a0 You will have to cook them in 2 batches. Add a little more oil if necessary.
