{"id":1280,"date":"2011-05-30T11:44:56","date_gmt":"2011-05-30T18:44:56","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1280"},"modified":"2011-05-30T11:44:56","modified_gmt":"2011-05-30T18:44:56","slug":"cornbread-pudding-2","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1280","title":{"rendered":"Cornbread pudding"},"content":{"rendered":"<p><!--more-->Ingredients:<\/p>\n<ul>\n<li>2 2\/3 c. cubed moist cornbread<\/li>\n<li>1 T unsalted butter<\/li>\n<li>1 c thinly sliced yellow onions (about 1\/2 large onion)<\/li>\n<li>3\/4 c grated dry Jack cheese or cheddar<\/li>\n<li>2 tsp chopped fresh flat-leaf parsley<\/li>\n<li>1\/2 tsp chopped fresh rosemary<\/li>\n<li>1\/2 tsp chopped fresh thyme leaves<\/li>\n<li> 2 c heavy cream<\/li>\n<li>3 large eggs<\/li>\n<li>1 tsp kosher salt<\/li>\n<li>1\/2 tsp freshly ground black pepper<\/li>\n<\/ul>\n<p>Position rack in center of oven &amp; preheat to 350F<\/p>\n<p>Put cubed cornbread in buttered 10 or 12 inch cast iron skillet<\/p>\n<p>Set aside.\u00a0 Heat butter in another skillet over low heat.\u00a0 Add onions &amp; cook slowly, until soft &amp; golden brown.\u00a0 Remove from heat.\u00a0 Scatter onions, cheese &amp; parsley, rosemary &amp; thyme over cornbread cubes.\u00a0 Whisk heavy cream with eggs, slat &amp; pepper in mixing bowl and pour over the cornbread cubes. Let sit for 10 minutes to allow cornbread to absorb some of the custard. Bake until set &amp; golden, about 40 minutes.
