{"id":1284,"date":"2011-05-30T12:07:08","date_gmt":"2011-05-30T19:07:08","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1284"},"modified":"2011-05-30T12:07:08","modified_gmt":"2011-05-30T19:07:08","slug":"moist-cornbread-iron-skillet","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1284","title":{"rendered":"Moist Cornbread (iron skillet)"},"content":{"rendered":"<p><!--more--><\/p>\n<ul>\n<li>1 c yellow cornmeal<\/li>\n<li>1 c all-purpose flour<\/li>\n<li>1 1\/2 sp baking bowder<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/2 tsp chili powder<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 c sour cream<\/li>\n<li>1 c half-n-half<\/li>\n<li>6 T (3\/4 stick) butter, melted<\/li>\n<li>2\/3 c fresh or frozen corn, thawed &amp; drained if frozen<\/li>\n<\/ul>\n<p>Position rack in center of oven &amp; preheat to 400F<\/p>\n<p>Generously butter the sides and bottom of 8 or 10 inch cast iron skillet. In large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt &amp; chili powder.\u00a0 In medium bowl, whisk together the eggs, sour cream, half-n-half, 4T melted butter (allow to cools slightly before adding) and corn.\u00a0 Add the egg mixture tot he cornmeal mixture and stir well until just combined.\u00a0 Do not overmix.<\/p>\n<p>Heat skillet over medium heat. Pour cornmeal batter into the skillet, jiggling the skillet slightly to level out th ebatter.<\/p>\n<p>Bake in oven for 10 minutes.\u00a0 Remove the skillet from the oven &amp; pour the remaining 2 tablespoons of melted butter over the top. Return to the oven &amp; continue baking until golden brown and a toothpick inserted in center comes out clean, about 10 minutes more. Cool.
