{"id":1286,"date":"2011-05-30T12:14:17","date_gmt":"2011-05-30T19:14:17","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1286"},"modified":"2011-05-30T12:14:17","modified_gmt":"2011-05-30T19:14:17","slug":"zucchini-pancakes-w-sour-cream-sauce-iron-skillet","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1286","title":{"rendered":"Zucchini Pancakes w\/ sour cream sauce (iron skillet)"},"content":{"rendered":"<p><!--more-->Sour Cream Sauce:<\/p>\n<ul>\n<li>3\/4 c sour cream<\/li>\n<li>2 T finely chopped green onions, both green &amp; white parts<\/li>\n<li>1\/4 c dry white wine<\/li>\n<li>1 T fresh lemon juice<\/li>\n<\/ul>\n<p>zucchinin pancakes:<\/p>\n<ul>\n<li>3 c grated zucchinin (about 4 medium sized zucchinis)<\/li>\n<li>2 T all purpose flour<\/li>\n<li>2 T freshly grated parmesan cheese<\/li>\n<li>1\/4 c finely chopped green onion, white &amp; green parts (about 3 onions)<\/li>\n<li>3 larg eeggs, beaten<\/li>\n<li>1 T fresh lemon juice<\/li>\n<li>1 T canola oil (appx)<\/li>\n<li>Finely chopped chives fro garnish<\/li>\n<\/ul>\n<p>Sour cream sauce.\u00a0 Mix together all ingredients in small saucepan and cook over medium heat just until warm.\u00a0 Reduce heat to low while preparing pancakes<\/p>\n<p>Preheat oven to 250F.\u00a0 Place platter in oven to warm.<\/p>\n<p>Prepare pancakes &#8211; place grated zucchinin between 2 layers of paper towels and lightly press to remove moisture.\u00a0 Transfer to large bowl.\u00a0 Add flour, mix to coat.\u00a0 Add parmesan cheese, green onions, eggs, lemon juice &amp; mix well.<\/p>\n<p>Heat 1T canola oil in a\u00a0 10 or 12 inch cast iron skillet over medium heat.\u00a0 Drop 1\/3 c pancake batter into the skillet for each ancake, and cook, turning once, until golden brown on both sides (2-3 minutes).\u00a0 Transfer to warm platter in oven &amp; repeat until have used up all the badder.\u00a0<\/p>\n<p>To serve, pour a little of the warm sour cream suce over the pancakes &amp; garnish with chopped chives.<\/p>\n","protected":false},"excerpt":{"rendered":"","protected":false},"author":2,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[1],"tags":[],"class_list":["post-1286","post","type-post","status-publish","format-standard","hentry","category-uncategorized"],"_links":{"self":[{"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=\/wp\/v2\/posts\/1286","targetHints":{"allow":["GET"]}}],"collection":[{"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=1286"}],"version-history":[{"count":2,"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=\/wp\/v2\/posts\/1286\/revisions"}],"predecessor-version":[{"id":1288,"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=\/wp\/v2\/posts\/1286\/revisions\/1288"}],"wp:attachment":[{"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=1286"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=1286"},{"taxonomy":"post_tag","embeddable":true,"href":"http:\/\/gourmet.mygreatvet.com\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=1286"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
