{"id":1325,"date":"2011-09-08T23:12:54","date_gmt":"2011-09-09T06:12:54","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1325"},"modified":"2015-12-27T20:04:13","modified_gmt":"2015-12-28T03:04:13","slug":"chicken-enchiladas-in-white-sauce","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1325","title":{"rendered":"Chicken Enchiladas in White Sauce"},"content":{"rendered":"<p>1\/4 cup butter<\/p>\n<p>1\/4 cup flour<\/p>\n<p>2 cups chicken stock (or canned broth)<\/p>\n<p>8 ounces sour cream<\/p>\n<p>8 ounces chopped green chilies, undrained<\/p>\n<p>1\/4 teaspoon cayenne pepper<\/p>\n<p>3 cups chopped cooked chicken breasts<\/p>\n<p>1 small onion, finely chopped<\/p>\n<p>2 cups monterey jack cheese (or more)<\/p>\n<p>8 flour tortillas<\/p>\n<p>Directions:<\/p>\n<p>1In medium saucepan, melt butter. Stir in flour, add chicken stock, heat and stir until thickened and bubbly.<\/p>\n<p>2Add sour cream, green chilies and cayenne. Remove from heat.<\/p>\n<p>3In a separate bowl, toss cooked chicken and chopped onion. To this bowl, add 3\/4 cup sauce mixture from the saucepan. Stir well.<\/p>\n<p>4Fill each tortilla with scant 1\/3 cup chicken mixture, roll up and place seamside down in oblong greased casserole.<\/p>\n<p>5Pour remaining sauce on top.<\/p>\n<p>6Bake at 350 for 30 minutes, covered.<\/p>\n<p>7Remove from oven, take off foil and sprinkle cheese over top.<\/p>\n<p>8Return to oven or just let it sit on the stovetop while you call everyone to the table.
