{"id":1404,"date":"2011-11-06T14:42:27","date_gmt":"2011-11-06T21:42:27","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1404"},"modified":"2011-11-06T14:45:19","modified_gmt":"2011-11-06T21:45:19","slug":"potato-latkes-with-tomatoes-and-zucchini","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1404","title":{"rendered":"Potato Latkes with Tomatoes and Zucchini"},"content":{"rendered":"<p>Ingredients<\/p>\n<p>TOMATO STOCK:<\/p>\n<p>1 tablespoon\/15ml olive oil    <br \/>2 carrots, chopped     <br \/>2 celery ribs, chopped     <br \/>1 onion, chopped     <br \/>3 tablespoons\/45ml ketchup <\/p>\n<p>1 tablespoon\/15ml <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/peppercorn\/index.html\">peppercorns<\/a>    <br \/>12 large tomatoes, halved     <br \/>3 heads garlic, halved horizontally     <br \/>3 bunches fresh <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/basil\/index.html\">basil<\/a>    <br \/>1 bunch fresh <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/parsley\/index.html\">parsley<\/a><\/p>\n<p>ROASTED TOMATOES:<\/p>\n<p>2 cups\/500ml <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/tomato\/index.html\">cherry tomatoes<\/a>    <br \/>1 tablespoon\/15ml olive oil <\/p>\n<p>4 fresh <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/thyme\/index.html\">thyme<\/a> sprigs     <br \/>Salt and freshly ground black pepper <\/p>\n<p>ZUCCHINI:<\/p>\n<p>2 tablespoons\/30ml olive oil    <br \/>2 <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/zucchini\/index.html\">zucchini<\/a>, cut into very small <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/dice\/index.html\">dice<\/a>    <br \/>1 shallot, finely chopped     <br \/>Salt and freshly ground black pepper <\/p>\n<p>2 tablespoons\/30ml butter    <br \/>1 bunch fresh <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/chives\/index.html\">chives<\/a>, finely chopped     <br \/>1 bunch fresh parsley, chopped <\/p>\n<p>LATKES:<\/p>\n<p>4 to 6 Yukon <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/potato\/index.html\">gold potatoes<\/a>, cooked until tender but still firm     <br \/>1 onion, finely chopped     <br \/>1\/2 cup\/125ml finely chopped fresh chives     <br \/>2 eggs, beaten <\/p>\n<p>1 teaspoon\/5ml cayenne    <br \/>Salt and freshly ground black pepper     <br \/>Canola or olive oil, for frying <\/p>\n<p>SERVING:<\/p>\n<p>Soft <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/ricotta\/index.html\">ricotta cheese<\/a><\/p>\n<p>Fried eggs, sunny-side up <\/p>\n<p>Directions<\/p>\n<p>For the tomato <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/stock\/index.html\">stock<\/a>: Heat the oil in a stockpot over medium-high heat. Saute the carrots, celery and onions. Stir in the ketchup, peppercorns, tomatoes and garlic. Add the basil, parsley and enough water to cover. <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/simmer\/index.html\">Simmer<\/a> over low heat for about 45 minutes. <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/strain\/index.html\">Strain<\/a>.    <br \/>For the roasted tomatoes: Preheat the oven to 350 degrees F (180 degrees C). Arrange the tomatoes on a baking sheet lined with parchment paper. <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/drizzle\/index.html\">Drizzle<\/a> with the oil, add the thyme and season with salt and pepper. Bake for 45 minutes. Let cool.    <br \/>For the <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/zucchini\/index.html\">zucchini<\/a>: Heat the oil in a saucepan over medium-high heat. Saute the zucchini and <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/shallot\/index.html\">shallots<\/a> for about 2 minutes. Season with salt and pepper. Add 1 cup (250ml) tomato stock and continue cooking for about 2 minutes. Stir in the butter, and then the chives and parsley.    <br \/>For the latkes: Coarsely grate the potatoes into a large bowl of cold water. <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/drain\/index.html\">Drain<\/a>. Spread the potatoes and onions on a kitchen towel and roll up. Twist the towel tightly to wring out as much liquid as possible. Transfer the potato mixture to a bowl and stir in the chives, eggs, cayenne and some salt and pepper. Shape the potato mixture into patties.    <br \/>Heat the canola oil in an ovenproof nonstick skillet over medium-high heat until hot but not smoking. Working in batches, if necessary, cook the latkes until golden brown, about 2 minutes per side.
