{"id":1407,"date":"2011-11-06T21:40:23","date_gmt":"2011-11-07T04:40:23","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1407"},"modified":"2011-11-06T21:40:44","modified_gmt":"2011-11-07T04:40:44","slug":"curried-butternut-squash-soup","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1407","title":{"rendered":"Curried Butternut Squash Soup"},"content":{"rendered":"<p>Ellie Krieger recipe<\/p>\n<p><!--more-->Ingredients<\/p>\n<ul>\n<li> 1 tablespoon canola oil<\/li>\n<li>1 medium onion, chopped (about 2 cups)<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 (2 1\/2-pound) butternut squash, peeled, seeded and cut into 1-inch cubes<\/li>\n<li>6 cups low-sodium chicken broth or vegetable broth<\/li>\n<li>1 tablespoon plus 2 teaspoons curry powder<\/li>\n<li>1\/2 teaspoon salt, plus more, to taste<\/li>\n<li>2 tablespoons honey<\/li>\n<li>4 teaspoons plain low-fat yogurt, for garnish<\/li>\n<\/ul>\n<p>Directions<\/p>\n<p>Heat oil over medium heat in a 6-quart stockpot. Add onions and garlic and saute until soft but not brown, about 6 to 7 minutes. Add the butternut squash, broth, curry powder and salt and bring to a boil. Reduce heat and simmer until squash is tender, about 12 to 15 minutes. Remove from heat stir in honey and puree with an immersion blender or in batches in a blender until smooth.
