Meanwhile toss zucchini with \u00bd tsp salt in a colander set over a large bowl.\u00a0 Let stand 10 min, then gently squeeze excess moisture.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Times New Roman;\">Add pasta to boiling water and stir to prevent sticking.\u00a0 Cook 12 minutes till al dente.\u00a0 Reserve \u00bd cup of cooking water, then drain pasta.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Times New Roman;\">Heat butter in large skillet over med-hi heat.\u00a0 Add tomatoes and cook til blistered and slightly softened, 4 minutes.\u00a0 Stir in zucchini and lemon zest and cook, lightly crushing tomatoes with wooden spoon, until zucchini is crisp tender, 4 minutes.\u00a0 Season.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Times New Roman;\">Transfer mixture to a large bowl.\u00a0 Add pasta and cheese and toss.\u00a0 Stir in half the chives and \u00bc cup of cooking water, add more if needed to loosen.\u00a0 Divide into bowls and top with more cheese and remaining chives.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Kosher salt 2 large zucchini coarsely grated 12 oz lasagna noodles (not no boil) boken into bite-size pieces 3 tbls butter 2 cups cherry tomatoes \u00bd tsp finely grated lemon zest \u00bd cup grated parmesan 1 small bunch chives, cut into 1 inch pieces \u00a0 Boil water.
