{"id":1899,"date":"2013-09-21T07:57:18","date_gmt":"2013-09-21T14:57:18","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1899"},"modified":"2013-09-21T08:06:25","modified_gmt":"2013-09-21T15:06:25","slug":"gourmand-mushroom-linguini","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1899","title":{"rendered":"Gourmand Mushroom Linguini"},"content":{"rendered":"<p>This recipe makes 2 to 4 servings.\u00a0 <!--more--><\/p>\n<p>Ingredients<br \/>\n5 oz mixed mushrooms, sliced into bite size equal pieces<br \/>\n(shiitake, crimini and oyster)<br \/>\n1 T olive oil<br \/>\n\u00bc tsp truffle salt<br \/>\n2 cups linguini pasta, cooked al dente<br \/>\n\u00bc cup white wine, preferably Chenin Blanc<br \/>\n1 tsp white truffle oil<br \/>\n1 cup baby spinach<br \/>\n1 Tbsp minced fresh thyme and rosemary<\/p>\n<p>Directions:<br \/>\nAdd olive oil to hot saut\u00e9 pan. When the oil is up to temperature, saut\u00e9 mushrooms with a little salt and pepper. Bring a large pot of salted water to a boil and add linguini. Mince the fresh herbs and garlic, add to cooking mushrooms and mix well. Once the mushrooms are browned, remove and set aside. Reduce heat to medium-high and add a small amount of olive oil then spinach and saut\u00e9 just a few seconds. Then add the mushrooms back to the pan, drizzle with truffle oil and add truffle salt, mix well. As those flavors begin to blend, drain your pasta when al dent\u00e9, then add the cooked linguini in with the mushrooms and spinach and toss. Drizzle a small amount of white wine to increase liquid and make a delicious sauce.
