{"id":1934,"date":"2013-11-16T14:34:36","date_gmt":"2013-11-16T21:34:36","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=1934"},"modified":"2013-11-16T14:34:36","modified_gmt":"2013-11-16T21:34:36","slug":"texas-flour-tortillas","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=1934","title":{"rendered":"Texas Flour Tortillas"},"content":{"rendered":"<p><a title=\"Homesick Texan\" href=\"http:\/\/www.homesicktexan.com\/2007\/03\/and-end-to-my-quest-flour-tortillas.html\" target=\"_blank\">From: Homesick Texan<\/a><\/p>\n<p><!--more--><\/p>\n<h2>Ingredients:<\/h2>\n<p>Two cups of all-purpose flour (can make them whole wheat by substituting one cup of whole-wheat flour for white flour)<br \/>\n1 1\/2 teaspoons of baking powder<br \/>\n1 teaspoon of salt<br \/>\n2 teaspoons of vegetable oil<br \/>\n3\/4 cups of warm milk<\/p>\n<h2>Method:<\/h2>\n<p>Mix together the flour, baking powder, salt and oil.<br \/>\nSlowly add the warm milk.<br \/>\nStir until a loose, sticky ball is formed.<br \/>\nKnead for two minutes on a floured surface. Dough should be firm and soft.<br \/>\nPlace dough in a bowl and cover with a damp cloth or plastic wrap for 20 minutes.<br \/>\nAfter the dough has rested, break off eight sections, roll them into balls in your hands, place on a plate (make sure they aren\u2019t touching) and then cover balls with damp cloth or plastic wrap for 10 minutes. (It\u2019s very important to let the dough rest, otherwise it will be like elastic and won\u2019t roll out to a proper thickness and shape.)<br \/>\nAfter dough has rested, one at a time place a dough ball on a floured surface, pat it out into a four-inch circle, and then roll with a rolling pin from the center until it\u2019s thin and about eight inches in diameter. (If you roll out pie crusts you\u2019ll have no problem with this.) Don\u2019t over work the dough, or it\u2019ll be stiff. Keep rolled-out tortillas covered until ready to cook.<br \/>\nIn a dry iron skillet or comal heated on high, cook the tortilla about thirty seconds on each side.
