{"id":199,"date":"2009-01-26T20:15:29","date_gmt":"2009-01-27T03:15:29","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=199"},"modified":"2009-01-26T20:34:37","modified_gmt":"2009-01-27T03:34:37","slug":"jicama-apple-slaw","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=199","title":{"rendered":"Jicama Apple Slaw"},"content":{"rendered":"<p>From:<a href=\"http:\/\/planetgreen.discovery.com\/tv\/emeril-green\/emeril-episode-buffalo-girl.html\">Green Family : Emeril Green Episode: Buffalo Girl : Planet Green<\/a><br \/>\n<!--more--><br \/>\nYield: 6 servings<\/p>\n<h2>Ingredients:<\/h2>\n<p>1 large Jicama<br \/>\n1 bunch medium carrots, peeled (about 5)<br \/>\n2 tablespoons kosher salt<br \/>\n2 Granny Smith apples<br \/>\n6 scallions (white and green parts), sliced<br \/>\n1 bunch watercress<\/p>\n<h2>Ingredients for Dressing:<\/h2>\n<p>3 tablespoons cider vinegar<br \/>\n3 tablespoons honey<br \/>\n2 tablespoons Dijon mustard<br \/>\n1 tablespoon plus 1 teaspoon kosher salt<br \/>\nFreshly ground black pepper<br \/>\n1\/3 cup extra-virgin olive oil<\/p>\n<h2>Method:<\/h2>\n<p>Whisk vinegar with the honey, mustard, salt, and black pepper to taste in a small bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing.<\/p>\n<p>With the grating blade, shred the jicama and carrots.<\/p>\n<p>Quarter, core, and shred the apples. Toss the jicama mixture with the apples, scallions, and about 1\/2 cup of the dressing. Refrigerate until chilled and the flavors come together, about 1 hour. When ready to serve, toss the watercress with the remaining dressing.
