{"id":2032,"date":"2014-01-05T12:35:23","date_gmt":"2014-01-05T19:35:23","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=2032"},"modified":"2014-01-05T12:35:23","modified_gmt":"2014-01-05T19:35:23","slug":"creamy-kale-and-eggs","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=2032","title":{"rendered":"Creamy Kale and Eggs"},"content":{"rendered":"<p>Recipe courtesy of Katie Lee\u00a0 <!--more--><\/p>\n<p>Prep Time:25\u00a0 \u00a0Cook Time:15 min\u00a0 Level:Easy\u00a0 Serves:4 servings.<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients<\/p>\n<p>1 tablespoon extra-virgin olive oil<\/p>\n<p>2 tablespoons chopped leeks, white and pale green parts only (about 1\/2 small)<\/p>\n<p>1 bunch kale, stems removed and cut crosswise into thin ribbons<\/p>\n<p>Pinch freshly grated nutmeg<\/p>\n<p>Kosher salt and freshly ground black pepper<\/p>\n<p>1\/4 cup 2-percent Greek yogurt<\/p>\n<p>4 large eggs<\/p>\n<p>2 tablespoons grated Parmesan<\/p>\n<p>4 slices crusty bread, toasted<\/p>\n<p>&nbsp;<\/p>\n<p>Directions<\/p>\n<p>Heat the olive oil in a medium nonstick skillet over medium heat. Add the leeks, reduce the heat to low, and cook until softened but not brown, about 8 minutes.<\/p>\n<p>Stir the kale into the leeks and cook until just wilted, about 2 minutes. Season the mixture with the nutmeg and some salt and pepper. Stir in the yogurt until combined.<\/p>\n<p>Make four indentations in the kale and carefully crack an egg into each. Sprinkle a little salt and pepper over each egg.
