{"id":264,"date":"2009-04-26T22:43:26","date_gmt":"2009-04-27T05:43:26","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=264"},"modified":"2009-07-25T16:49:35","modified_gmt":"2009-07-25T23:49:35","slug":"mediterranean-fish-tacos","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=264","title":{"rendered":"Mediterranean Fish Tacos"},"content":{"rendered":"<h2>Rachel Ray Recipe<\/h2>\n<p><!--more--><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>3 lemons, zested and juiced<\/li>\n<li>2 sprigs fresh oregano, leaves finely chopped<\/li>\n<li>A handful flat-leaf parsley, finely chopped<\/li>\n<li>3 cloves garlic, grated or minced<\/li>\n<li>1\/4 cup extra-virgin olive oil<\/li>\n<li>2 pounds halibut or mahi mahi<\/li>\n<li>Salt and pepper<\/li>\n<li>12 (5 to 6-inch) flour tortillas<\/li>\n<li>1 heart romaine, chopped<\/li>\n<li>1\/2 red onion, thinly sliced<\/li>\n<li>8 pepperoncini peppers<\/li>\n<li>2 roasted red peppers, patted dry<\/li>\n<li>1 cup Greek yogurt<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>1\/4 cucumber, peeled and grated<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<p>Heat grill pan over medium high heat or preheat outdoor grill.<\/p>\n<p>Combine the juice and zest of 2 lemons, oregano, parsley, 2 cloves garlic, olive oil and add fish, turn to coat and season with salt and pepper.<\/p>\n<p>Wrap tortillas in foil and place in warm oven or directly on grill to soften and warm through.<\/p>\n<p>Shred romaine lettuce and combine with sliced onions.<\/p>\n<p>Slice hot peppers and reserve.<\/p>\n<p>\u00a0<\/p>\n<p>Combine red peppers and yogurt in food processor.
