{"id":276,"date":"2009-05-03T23:29:24","date_gmt":"2009-05-04T06:29:24","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=276"},"modified":"2009-05-11T14:34:36","modified_gmt":"2009-05-11T21:34:36","slug":"orzo-with-chick-peas","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=276","title":{"rendered":"Orzo with Chick Peas"},"content":{"rendered":"<p><!--more--><\/p>\n<ul>\n<li>Salt<\/li>\n<li>1\/2 pound orzo<\/li>\n<li>2 tablespoons extra-virgin olive oil<\/li>\n<li>1 small to medium zucchini, diced<\/li>\n<li>1\/2 red onion, chopped<\/li>\n<li>3 cloves garlic, chopped<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<li>1 (15-ounce) can chick peas, drained<\/li>\n<li>1\/2 cup parsley leaves, chopped<\/li>\n<li>1\/4 cup mint leaves, finely chopped<\/li>\n<li>1\/2 cup feta or goat cheese, crumbled<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<p>Bring a large pot of salted water to a boil. Add orzo and cook to al dente.<\/p>\n<p>Heat extra-virgin olive oil in a skillet, add zucchini, onions and garlic, season with salt and pepper and cook 6 to 7 minutes until tender, add chick peas and heat through.
