{"id":423,"date":"2009-08-30T11:57:26","date_gmt":"2009-08-30T18:57:26","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=423"},"modified":"2009-08-30T11:57:26","modified_gmt":"2009-08-30T18:57:26","slug":"almost-tandoori-chicken","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=423","title":{"rendered":"Almost Tandoori Chicken"},"content":{"rendered":"<p>Rachel Ray recipe, served with Lentil-Potato Salad<!--more--><\/p>\n<p>Ingredients<br \/>\n1 cup Greek yogurt<br \/>\n1 tablespoon turmeric, a palmful<br \/>\n1 tablespoon coriander<br \/>\n1 tablespoon smoked paprika<br \/>\n1\/2 tablespoon ground cumin, 1\/2 a palmful<br \/>\n1 teaspoon ground cardamom, 1\/3 palmful<br \/>\n1 lime, zested<br \/>\n2 pounds skinless, boneless chicken thighs<br \/>\nSalt and freshly ground black pepper<br \/>\n1 green apple, peeled, cored and thinly sliced into matchsticks<br \/>\n2 plum tomatoes, seeded and very thinly sliced lengthwise<br \/>\n4 scallions, thinly sliced<br \/>\n2 tablespoons olive or vegetable oil<br \/>\n4 pieces naan bread, plain or flavored, store-bought, warmed<br \/>\nDirections<br \/>\nPreheat oven to 500 degrees F.<\/p>\n<p>Combine the yogurt with the spices and zest of lime in a large bowl.<\/p>\n<p>Cut the chicken into large chunks and season liberally with salt and pepper. Add to the yogurt mixture and toss to coat evenly. Put a small wire rack on a baking sheet or a slotted broiler pan. Arrange the chicken on the rack or slotted pan and roast until charred at the edges and juices run clear, about 15 minutes.<\/p>\n<p>Combine the apple, tomatoes and scallions in a serving bowl.
