{"id":45,"date":"2008-11-15T23:08:47","date_gmt":"2008-11-16T06:08:47","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=45"},"modified":"2008-11-15T23:08:47","modified_gmt":"2008-11-16T06:08:47","slug":"scallop-and-mushroom-chowder","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=45","title":{"rendered":"Scallop and Mushroom Chowder"},"content":{"rendered":"<h1><!--more--><\/h1>\n<h1>Ingredients<\/h1>\n<ul>\n<li>4 tablespoons butter, divided use<\/li>\n<li>1\/2 pound bay scallops, rinsed and patted dry<\/li>\n<li>1\/4 cup all-purpose flour<\/li>\n<li>1 (8-ounce) package sliced mushrooms<\/li>\n<li>1 rib celery, finely chopped<\/li>\n<li>1\/4 cup white wine, preferably Chardonnay<\/li>\n<li>1 (10-ounce) can condensed cream of potato soup (recommended: Campbell&#8217;s)<\/li>\n<li>1 (8-ounce) bottle clam juice<\/li>\n<li>1 teaspoon seafood seasoning<\/li>\n<\/ul>\n<h1>Directions<\/h1>\n<p>In medium pot, over medium-high heat, melt 2 tablespoons butter. Dredge scallops in flour. Shake off excess and saute in butter for 3 minutes, or until opaque and starting to color. Use a slotted spoon to remove scallops from pan and set aside.<\/p>\n<p>Melt remaining 2 tablespoons of butter in pan. Saute mushrooms and celery for 5 minutes.<\/p>\n<p>Stir in wine, potato soup, clam juice and seafood seasoning. Bring to boil, reduce heat and simmer for 10 minutes.
