{"id":591,"date":"2009-12-06T13:59:42","date_gmt":"2009-12-06T20:59:42","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=591"},"modified":"2010-04-26T21:58:58","modified_gmt":"2010-04-27T04:58:58","slug":"herb-apricot-chicken","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=591","title":{"rendered":"Herb-Apricot Chicken"},"content":{"rendered":"<p>Rachael Ray recipe<!--more--><\/p>\n<p>Ingredients<br \/>\n3 tablespoons extra-virgin olive oil<br \/>\n3 pounds chicken breasts and boneless thighs, cut into large chunks<br \/>\nSalt and freshly ground black pepper<br \/>\n1\/4 cup aged balsamic vinegar<br \/>\n2 cups chicken stock<br \/>\n20 to 24 dried apricots, chopped<br \/>\n5 to 6 sprigs thyme<br \/>\nA generous handful fresh flat-leaf parsley leaves, chopped<br \/>\n3 tablespoons chopped chives<br \/>\n1 lemon, 2 teaspoons zest and the juice<br \/>\nDirections<br \/>\nIn a large skillet with high sides, heat the oil, 3 turns of the pan, over medium-high heat. Season chicken with salt and pepper liberally. When oil ripples, add chicken and brown it on both sides, 7 to 8 minutes total. Add balsamic vinegar and stir 30 seconds, add stock, apricots and thyme and reduce heat to medium-low to low. Place a lid on the pan and simmer 10 minutes. Take lid off, stir in the parsley, chives, lemon zest and juice and turn off heat.
