Place sliced Rosemary Apricot Pork Tenderloin on top and drizzle on any extra apricot glaze. <!--more--><\/p>\n<p>Ingredients<br \/>\n2 cups reduced-sodium chicken broth<br \/>\n2 cups whole milk<br \/>\n1 cup polenta or yellow stone-ground cornmeal<br \/>\n1\/8 teaspoon dried thyme<br \/>\n1\/2 cup finely grated Parmigiano Reggiano cheese\u00a0<br \/>\n1 tablespoon butter<br \/>\n1\/2 teaspoon salt<\/p>\n<p>\u00a0<\/p>\n<p>Instructions<br \/>\n1. Place broth and milk in a saucepan and bring to a boil over medium-high heat. Add polenta, whisking to prevent clumping. Reduce heat to low. Add thyme and cook, stirring constantly, until liquid is absorbed and polenta is creamy and thoroughly cooked, 5 to 10 minutes.<br \/>\n2. Add cheese, butter and salt, stirring gently until incorporated.
