{"id":606,"date":"2009-12-11T13:44:58","date_gmt":"2009-12-11T20:44:58","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=606"},"modified":"2009-12-11T13:44:58","modified_gmt":"2009-12-11T20:44:58","slug":"rosemary-apricot-pork-tenderloin-recipe","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=606","title":{"rendered":"Rosemary Apricot Pork Tenderloin Recipe"},"content":{"rendered":"<p>Serve over cheese polenta<!--more--><\/p>\n<p>Ingredients<br \/>\n2 pounds pork tenderloin<br \/>\n3 tablespoons olive oil<br \/>\n6 tablespoons finely minced rosemary<br \/>\n6 garlic cloves, minced<br \/>\nCoarsely ground black pepper<br \/>\n1 teaspoon salt<br \/>\n1 cup apricot preserves<br \/>\n3 tablespoons fresh lemon juice<br \/>\n2 garlic cloves, pressed<br \/>\nInstructions<br \/>\n1. Preheat oven to 400F.\u00a0<br \/>\n2. Brush pork with 1 tablespoon oil; sprinkle with rosemary, garlic, salt and pepper. Heat remaining 2 tablespoons oil in large ovenproof skillet over medium-high heat. Add pork and cook until brown on all sides, turning often, about 5 minutes.\u00a0<br \/>\n3. Transfer pan to oven, and roast pork until meat thermometer registers 150F, about 15 minutes.<br \/>\n4. While pork roasts, combine preserves, lemon juice and garlic.\u00a0<br \/>\n5. Remove pan from oven and brush jam mixture over pork. Let rest 8 minutes. Cut crosswise into 1\/4-inch-thick slices. Serve on top of polenta. Drizzle sauce on top.
