{"id":608,"date":"2009-12-11T13:51:09","date_gmt":"2009-12-11T20:51:09","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=608"},"modified":"2009-12-12T14:03:24","modified_gmt":"2009-12-12T21:03:24","slug":"spinach-lasagna","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=608","title":{"rendered":"Red and Green-Spinach Lasagna"},"content":{"rendered":"<p>Prepare the lasagna a day ahead and bake just before serving. <!--more--><br \/>\nIngredients<br \/>\nTomato Sauce:<br \/>\n3 tablespoons olive oil<br \/>\n1 small yellow onion, finely chopped<br \/>\n2 garlic cloves, crushed<br \/>\n1 (28-ounce) can diced tomatoes, undrained<br \/>\n1 (28-ounce) can crushed plum tomatoes,<br \/>\nundrained<br \/>\n1 tablespoon tomato paste<br \/>\n1 teaspoon sugar<br \/>\n1 teaspoon kosher salt<br \/>\n1 tablespoon dried oregano<br \/>\n1 tablespoon dried basil<br \/>\n1\/2 teaspoon crushed red pepper<br \/>\n\u00bd teaspoon coarsely ground black pepper<\/p>\n<p>Lasagna:<br \/>\n2\u00bd cups whole-milk ricotta cheese<br \/>\n2 (10-ounce) packages frozen spinach, thawed, drained and squeezed dry<br \/>\n1 egg<br \/>\n9 no-cook lasagna noodles<br \/>\n1 pound part-skim mozzarella cheese, thinly sliced<br \/>\n2\/3 cup grated Parmigiano Reggiano cheese<br \/>\nInstructions<br \/>\n1. To prepare sauce, heat olive oil in a large saucepan. Add onion and garlic; cook until soft and translucent, but not brown.<br \/>\n2. Add tomatoes, tomato paste, sugar, salt, oregano, basil, crushed red pepper and black pepper; stir well. Bring to a boil; simmer, uncovered, 30 minutes. Let cool slightly.<br \/>\n3. Preheat oven to 375F.<br \/>\n4. To prepare lasagna, combine ricotta cheese, spinach and egg in a large bowl; mix well.<br \/>\n5. Coat the bottom of a 13 x 9-inch baking pan with a third of the tomato sauce. Cover sauce with 3 noodles without overlapping (break noodles to fit), half the ricotta mixture and half the mozzarella slices. Add half the remaining sauce, 3 noodles, remaining ricotta mixture and remaining mozzarella. Top with remaining 3 noodles, remaining sauce and Parmigiano Reggiano cheese. To make ahead of time, cover with foil and refrigerate 6 to 8 hours or overnight.<br \/>\n6. Place pan on baking sheet. Bake, uncovered, 40 minutes, or until bubbly. Let stand about 15 minutes before cutting into squares.
