{"id":816,"date":"2010-02-28T21:56:25","date_gmt":"2010-03-01T04:56:25","guid":{"rendered":"http:\/\/gourmet.mygreatvet.com\/?p=816"},"modified":"2010-02-28T21:56:25","modified_gmt":"2010-03-01T04:56:25","slug":"chicken-salad","status":"publish","type":"post","link":"http:\/\/gourmet.mygreatvet.com\/?p=816","title":{"rendered":"Chicken Salad"},"content":{"rendered":"<p>Ina Garten made sandwiches with this salad which includes fresh tarragon leaves. <!--more--><\/p>\n<p>Ingredients<br \/>\n4 split (2 whole) chicken breasts, bone-in, skin-on<br \/>\nGood olive oil<br \/>\nKosher salt and freshly ground black pepper<br \/>\n1\/2 cup good mayonnaise<br \/>\n1 1\/2 tablespoons chopped fresh tarragon leaves<br \/>\n1 cup small-diced celery (2 stalks)<br \/>\n1 cup green grapes, cut in 1\/2<br \/>\nDirections<br \/>\nPreheat the oven to 350 degrees F.<\/p>\n<p>Place the chicken breasts, skin side up, on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked through. Set aside until cool.<\/p>\n<p>When the chicken is cool, remove the meat from the bones and discard the skin and bones. Cut the chicken into a 3\/4-inch dice.
