Criss Cross Peanut Butter Cookies

Posted by nicki on Mar 14, 2011 in Uncategorized |

This recipe is from the New Settlement Cookbook that Bob gave me before we were married.

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
3 cups flour
1 1/2 tsp soda
1/2 tsp salt
1 tsp vanilla
1 cup peanut butter

Cream shortening and sugar well.  Add the eggs well beaten, vanilla, the flour sifted with the salt and soda, and then the peanut butter.  Mix well and knead.  Roll into balls about 3/4 inch across.  Place 1 inch apart on greased pans, press with fork lengthwise and then crosswise.  Bake at 400degrees F. 5 to 10 minutes.
