Brown Sugar Blondies

  • 1 1/4 c. Flour
  • 1 tsp Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/4 tsp Salt
  • 3/4 c. Butter (at room temperature)
  • 1 c. Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 2/3 c Sliced almonds

Preheat oven to 350 degrees.  Butter an 8 inch square baking pan

In a bowl, stir together the flour, baking powder, baking soda and salt.  In a separate bowl or in mixer, blend together butter & sugar on medium speed, until creamy.  Add the eggs and vanilla and beat until smooth.  Add the dry ingredients to the wet ingredients and mix on low speed just until blended.  Spread the batter evenly into prepared pan. Sprinkle with the almonds.

Bake until golden brown, and a toothpick inserted into center comes out clean, about 30 minutes.  Let cool completely in the pan on a wire rack.  Using a sharp knife, cut into squares & serve.

Serve with a scoop of vanilla, coffee or toasted almond ice cream.  Drizzle with bittersweet chocolate sauce.

Soft Molasses Cookies

Ingredients:

  • 3/4 cup margarine
  • 3/4 cup sugar
  • 1/4 cup molasses
  • 2 cups flour
  • 2 tsp soda
  • 1/4 tsp cinnamon
  • 3/4 tsp cloves
  • 3/4 tsp ginger

Directions:

Mix together. Make balls and roll in sugar. Bake at 375 degrees for 10 minutes or less (take out right before you think they are done, will cook more out of oven, if you want softer cookies). You can put a small cup of water in the oven and the cookies will bake up softer.

Applesauce Cookies

  • 3/4 c. shortening
  • 1c. brown sugar
  • 1 egg
  • 1/2 c. applesauce
  • 2 1/4 c. all purpose flour, sifted
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1 c. raisins
  • 1/2 c. chopped walnuts

Topping:

  • 1/4 c. granulated sugar
  • 1 tsp cinnamon

Directions:

  • Preheat oven to 375F
  • Combine shortening, brown sugar, eg – stir well
  • Stir in applesauce
  • combine dry ingredients, then add to shortening mixture – stir well
  • fold in raisins & nuts
  • Drop by tablespoons onto greased baking sheet
  • Sprinkle on cinnamon/sugar topping
  • Bake 10 – 12 minutes.
  • While cookies are warm, press down slightly to create a crinkly appearance.

Makes 32 cookies – Each: 120kcal, 6g fat, 4mg chol., 1g prot., 17g. carbs, 1g fiber, 60mg sodium
