Potato Pancakes
Ingredients:
- 1 egg, beaten
- 2T all purpose flour
- 1 tsp baking powder
- 1 russet potato, peeled & grated
- 1/4 yellow onion, grated
- 2 T canola oil
- *sour cream for garnish
- *chopped chives for garnish
In medium bowl, whisk the egg, flour baking powder.
Peel & grate the potato on the medium sized holes of a box grater. Place in colander & rinse lightly with cold water. Press with paper towels to blot excess moisture. Grate the onion. Add the grated potatoes & onions to the egg mixture & mix.
Heat oil over medium heat in 12 inch cast iron skillet. Scoop 1/3 c of potato mixture into pan. Flatten with spatula to a thickness of 1/4 insh. Cook until golden, 3 minutes on each side. You will have to cook them in 2 batches. Add a little more oil if necessary. Garnish with sour cream & chives.
