Split Pea Burgers

Alton Brown recipe

  • 2 T olive oil, plus additional for sauteing
  • 1/2 c onion, chopped
  • 1/2 c bell pepper, chopped
  • to taste – kosher salt
  • 2 tsp garlic, minced
  • 4 ounces mushrooms, sliced
  • 3 c vegetable broth
  • 1 c dried split peas, sorted & rinsed
  • 1/2 c raw brown rice
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 c plain dry bread crumbs
  • to taste, black pepper, freshly ground

Heat 1 T oil in large saucepan, over medium heat.  Add onion, bell pepper, generous pinch of salt.  Sweat 5 minutes or until onion is soft.  Add garlic & mushrooms, continue to cook another 4 mintues

Add broth, split peas, rice, coriander, cumin.  Increase heat to high and bring to boil. Reduce heat to low, cover, simmer for 1 hour, or until rice & peas are tender.

Remove from heat, gently pour mixture into the bowl of a food processor.  Process until just combined.  Do not puree.  Pure mixture into a bowl and stir in 3/4 c bread crumbs. Season to taste with salt & pepper.  Refrigerate for 30 minutes

Shape mixture into patties and dredge on each side in remaining 1/4 c bread crumbs.  Heat remaining 1 T oil in medium saute pan over medium heat.  Add 2 burgers at a time and saute until brown on each side, 3-4 minutes per side.  To grill, cook on high for 3-4 minutes per side. Serve immediately.
