Paleo Zucchini Hash

This is a good breakfast side dish.  Can be made with regular potatoes and more conventional seasonings if desired. 

Ingredients:

 

2 small sweet potatoes

2 small zucchini squash

2 shallots

2 eggs

½ tsp salt

1 T curry powder

½ T cinnamon

5 T coconut oil

 

Directions:

 

Peel and rinse potatoes

Grate potatoes and zucchini

Finely dice shallots

Combine above with eggs and spices

Heat coconut oil in large skillet over medium heat.

Add hash and cook, stirring frequently, until potatoes are tender.

Serve by itself or topped with poached or fried egg.
