Easy Broccoli Soup
This is a great recipe for using up left over broccoli stocks.
1 large onion
2 stalks celery
1 bunch of broccoli, stocks and florets
4 – 6 cups of soup stock (meat or vegetable)
Salt and pepper to taste
Grease pan with your favorite cooking oil (I use coconut oil)
Add chopped onion and celery. Cook till onions are transparent. Add broccoli stocks, chopped, and a little of the stock. Simmer for 15 minutes. Add the broccoli florets and the rest of the stock. Season soup with salt and pepper and simmer for another 10 minutes.
Remove from heat and blend with submersion blender till smooth. Serve.
