Dutch Pea Soup

This is the old Dutch recipe Cori gave me in the 60’s

Ingredients:

  • 1 lb dried split peas, rinsed
  • 1 cup chopped onion
  • 3 cups chopped leeks
  • 1 lg celeraic-peeled and diced
  • 3 qts water
  • 2 tsp salt
  • 1 ham hock
  • 1lb sliced carrots
  • 1 1/2 lbs sliced potatoes

Bring all ingredients, except carrots and potatoes to a boil, turn heat down, partially cover and let cook for 1 hour, stirring occassionally.

Remove ham bone.  With big spoon, smoosh each piece of celeraic against the side of the pan.  Add carrots and  potatoes and stir.  Cook 30 minutes till veggies are tender.  Season with pepper when done.

Substitutions:

  • leeks – onion
  • cleriac – celery
