Rice Casserole

This is the recipe Cori jotted down for me on a memo pad while she was working at Bridgeford Foods.  Its tried and true.

1 cup raw rice
1 1/2 lbs sausage
1 large onion
1 bunch celery
1 green pepper
2 pkgs noodle soup
4 1/2 cups boiling water
1/4 cup slivered almonds
1 can mushrooms

Brown sausage lighly.  Remove from skillet, pour off grease.  Chop onion, celery, and pepper fine and brown lightly in remaining sausage grease.  Add soup to boiling water and simmer about 5 minutes.
Combine all ingredients with raw rice.  Pour into baking pan and bake 2 hours at 350 degrees. Cover while baking.
