Alton’s French Toast
I took notes from Alton’s Good Eats episode on French Toast.
Prepare the custard the night before. Blend the following ingredients and refrigerate.
1 cup half ‘n half
2 Tbls honey
1/4 tsp salt
3 eggs
blend gently, cover and refrigerate
Also, slice day old bread and leave out to dry.
To prepare the French toast:
Heat large, non-stick skillet 350-375 degrees
Heat oven to 375 with rack at or just above center
Pour custard into a pie pan and add slices of bread
Let soak for 30 seconds per side, then place on a rack to drain and rest for at least 2 minutes
Place soaked bread in pan and brown. Should take about 5 to 10 minutes to brown both sides.
Place browned bread back on rack, when all pieces have been browned place rack in oven for 5 minutes. Keep warm until ready to serve.
