Easy Caesar Dressing

Ingredients

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons milk
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon-mayonnaise blend
  • 1 garlic clove, minced
  • Dash cayenne pepper
  • 1 bunch romaine, torn
  • Salad croutons and additional grated Parmesan cheese, optional

Directions

  • In a small bowl, whisk the first seven ingredients. Place romaine in
  • a large bowl. Drizzle with dressing and toss to coat. Serve with
  • salad croutons and additional cheese if desired. Yield: 8 servings.
Nutritional Facts: 1 cup (calculated without croutons and additional cheese) equals 73 calories, 6 g fat (1 g saturated fat), 5 mg cholesterol, 126 mg sodium, 2 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1 fat.

Slow Cooker Refried Beans

Ingredients
1 onion, peeled and halved
3 cups dry pinto beans, rinsed
1/2 fresh jalapeno pepper, seeded and chopped
2 tablespoons minced garlic
1 teaspoons salt
1 3/4 teaspoons fresh ground black pepper
1/8 teaspoon ground cumin, optional
9 cups water
Directions
1.Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook on High for 8 hours, adding more water as needed. Note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high.
2.Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.
